Double Chocolate Chip Cookie Recipe

Hey girlies!

So this weekend I was in the baking mood and decided to bake some DOUBLE CHOCOLATE CHIP COOKIES! Omg they were amazing. So amazing I just had to share my recipe with you! I made a few adjustments to the recipe I found and they turned out to be absolutely divine. They were so simple to make and took a total of 40 minutes! About 30 minutes to prepare then 10 minutes in the oven.

Ingredients:
·         110g butter
·         200g caster sugar
·         1 egg
·         1 teaspoon of vanilla extract/essence
·         125g plain flour
·         30g good quality cocoa powder (I used Green and Blacks)
·         ½ teaspoon of bicarbonate of soda
·         A pinch of salt
·         150g white chocolate chips

STEP 1:


Preheat your oven to 180 degrees C or gas mark 4.

Beat the butter and sugar together until soft and creamy and smooth.


STEP 2:
Add the beaten egg and vanilla and mix together until smooth.



STEP 3:



In a separate bowl sift and mix together the flour, cocoa powder, bicarbonate of soda and salt.



STEP 4:



Gradually add this to the creamy mixture. Make sure it is all well combined until you have a dough-like mixture, which is still rather smooth. There shouldn’t be too many lumps!



Top Tip: Making a mess is crucial to getting this recipe absolutely right… Just so you can explain to your parents why there is flour all over their kitchen. If there isn’t flour or cocoa powder in the biscuit cupboard, you aint doing it right!



STEP 5:



Mix in the chocolate chips until they are well distributed within the cookie dough mixture.



STEP 6:



 Using a teaspoon, take rounded spoonfuls of the mixture and place onto a greased baking tray. Make sure you allow enough room between the spoonfuls to allow the mixture to spread whilst cooking. 
Gently press each mound down to flatten them slightly.



STEP 7:



Place the baking tray(s) in the middle of the oven and allow to bake for 8-10 minutes. If you like your cookies moist and gooey, cook for 8 minutes. If you prefer them crispy and crunchy, cook for 10 minutes. I like mine somewhere in between so I cooked mine for 9 minutes.



STEP 8:



Remove tray(s) from oven. Allow cookies to cool on the baking tray for at least 5 minutes before transferring over onto a cooling rack. This allows the cookies to set so they don’t fall apart if you try to pick them up with a spatula.



After another 10 minutes of cooling, your cookies should be ready to eat!

Gooey and crispy chocolatey heaven! I could eat these all day every day! But remember kids, too much sweet stuff is bad for you, so eat as part of a balanced diet… hence the strawberries in this picture!
